Staff of Schreiberei takes shape
- After the successful launch of the fine dining concept "Tohru in der Schreiberei", the team of the second restaurant concept "Schreiberei" is increasingly taking shape
- Tom Heeg becomes head chef, David Lindner bar manager, Max Haußmann restaurant manager as well as sommelier of the Schreiberei
- Stephan Fobo will be the operations manager of the Schreiberei. His deputy is Fabian Post

The extensive renovation and conversion work in the courtyard garden, ground floor and basement of the former Stadtschreiberei is progressing. Starting in the summer, the "Schreiberei" will become a cosmopolitan favorite place for Munich residents on the one hand and for national and international guests on the other. Both visitors and employees should feel equally at home and come together here, because the Schreiberei in the heart of Munich's old town combines everything under one roof: creative dishes, great drinks and a unique atmosphere in a cozy, inviting location with excellent service. Marc Uebelherr and Tohru Nakamura want to put together the right team for this and are looking for special skills: "For our Schreiberei, we are looking for employees who are open-minded, enjoy their work and, above all, have their gastronomic heart in the right place," says Tohru Nakamura, Executive Chef and Managing Director of the Schreiberei. Five management positions have already been filled. Tom Heeg, for example, will be head chef at the Schreiberei. The 25-year-old was most recently head chef at Grapes Weinbar in Munich.Tohru Nakamura is looking forward to the collaboration: "At the Schreiberei, we want to work with Tom and our new kitchen team to develop a culinary DNA that represents a kind of unplugged cuisine - the best product quality, prepared to the point."
Also already on board the Schreiberei are Operations Manager Stephan Fobo (43, most recently Operations Manager at KOI Restaurant, Munich), his deputy Fabian Post (31, most recently Deputy F&B Manager as well as Restaurant Manager at Hotel Fährhaus ***** in Koblenz), Restaurant Manager and Sommelier Max Haußmann (most recently Restaurant Manager and Sommelier at Restaurant Mural *) and Bar Manager David Lindner (42, most recently Operations Manager at Salon Pitzelberger in Munich). Around these executives, Tohru Nakamura as well as Managing Director Marc Uebelherr want to build a competent, diverse and cosmopolitan team: "We are looking for people who live and complement our common spirit, love to host*in from the heart and of course also bring a very great passion for the perfect craft," explains Marc Uebelherr. "We have an international team in our restaurant 'Tohru in der Schreiberei' and already speak several languages among ourselves. So we are also very open to applications from abroad and are also looking forward to new sound within the Schreiberei staff," adds Tohru Nakamura.

The online campaign "join our team" represents the kick-off for recruiting an (international) team for the Schreiberei. For this purpose, expressive videos as well as photos with already existing team members, both from "Tohru" and the "Schreiberei" as well as professional models have been created. Applications (gladly by creative video) will be accepted by e-mail at. email@example.com accepted. Open positions from 01 July 2022 are positions in the kitchen, bar and service. We are looking for Chef de Rang, Commi de Rang, Commi de Bar, Chef de Partie, Commi de Cuisine, dishwasher, hostess as well as facility manager.

Marc Uebelherr (Managing Director of Schreiberei) looks back on more than 26 years of experience in the gastronomy as owner, consultant and partner of various restaurant concepts. In addition to the development and implementation of numerous successful gastronomic concepts,guide Gault Millauthe Munich native guide Gault Millauhas a large international network at his disposal. Furthermore, Marc Uebelherr is "Board Member International" of the gastronomy network "Leaders Club".
Stephan Fobo brings the expertise of over 25 years of experience in gastronomy to the Schreiberei team as the future operations manager. After completing his apprenticeship as a chef (Hotel am Moosfeld) and restaurant specialist (Hotel Schreiberhof, Aschheim), the native of Görlitz decided to pursue a career in the "front of house". In the process, the 43-year-old was both restaurant owner (Restaurant Essneun, Munich) and restaurant manager (Munich: Brasserie Oskar Maria, Gesellschaftsraum, The Grill in the Künstlerhaus). Most recently, the family man worked at Munich's KOI Restaurant as operations manager.
Fabian Post, a native of Munich, takes up the the position of deputy operations manager at the Schreiberei. The 31-year-old worked after his apprenticeship as a chef at the Hotel Königshof in Munich and after obtaining his master chef and training license in 2018, as a "Food & Beverage Trainee" and "Supervisor BQT" (Banquet Service) at the Charles Hotel Munich and most recently as Deputy F&B Manager and Restaurant Manager at the Hotel Fährhaus in Koblenz *****.
Tom Heeg completed his training in the restaurants (including "Taku*") of the hotel "Excelsior Hotel Ernst Restaurant. After that, the Cologne native worked in the restaurant "Haerlin" (2 Michelin stars **) in the Hotel Vierjahreszeiten in Hamburg. The 25-year-old also worked in the Munich restaurant Atelier ***, in the restaurant Ente * in Wiesbaden and most recently as head chef in the Grapes wine bar before he has now taken the position of head chef of the Schreiberei.
The Schreiberei was able to win Max Haußmann as restaurant manager Max Haußmann and sommelier. After training as a hotel manager at the "Bayerischer Hof" and "Vier Jahreszeiten," the Munich native completed his sommelier training in Linz. Afterwards, Max Haußmann worked abroad for nine years in various establishments that were awarded by the Guide Michelin. Via the stations in the "old wine house Neuner", the "Golden Calf", the restaurant, "Theresa", the "Hearthouse Member Restaurant" as well as that of the "Kubaschewski Bar" Max Haußmann was last restaurant manager and sommelier in the restaurant Mural *.
David Lindner was born in Munich and has French roots. The 42-year-old looks back on 22 years of experience in the restaurant, bar, club and event sectors. In the past twelve years , the future bar manager of the Schreiberei has mainly held managerial positions. A selection of his most formative stations: Harpers & Queens, Barysphare, Bar Harlander, the Heart and most recently Salon Pitzelberger.
